Dark Chocolate Truffle Filling

​

Yield 26 1 oz truffles

 

1 Lb Semi-Sweet Chocolate

8 oz Heavy Cream

2 oz Butter (cubed)

1 oz Sugar

1.5 oz Raspberry Liquor

 

 

Place chocolate in bowl ,warm cream and butter in a small pot. Pour  cream and butter over chocolate andl et sit 2 - 3 minutes to melt. Fold together to create an emulsion

Pour into flat pan to chill till firm.

Make rounds, roll in various toppings
